The Roman soldiers had nothing to gain by lying and everything to lose if Jesus was not dead. If Jesus would not have died on the cross the soldiers would have lost their own lives, for not preforming their duty. The Roman soldiers was an expert on death as you have said. That is why they pierced the side of Jesus with the spear until water and blood both came out of the wound. They knew that when there was water followed by blood then the person had to be dead. We now know why this is true. There is a sac around the heart and crucifixion causes this sac to be filled with water. When the side of this person, who has been crucified, is pierced with a spear there will 1st be blood of course from the wound. But the soldier will keep on pressing the spear further in the side of the person until water comes out from the sac around the heart. The soldier keeps thrusting the spear further in after the water comes out from the wound until blood comes out the second time. When blood gushes forth the second time the heart had to be pierced because the only source of blood within the sac is the heart. No one can live after the heart is pierced, so Jesus had to be dead when he was taken down off of the cross. Prophecy tells of the fact that His heart will be pierced in the OT. Lou
